Fresh black truffles.
In Manjares de la Tierra we select the best quality of our indigenous varieties of truffles: Tuber Melanosporum Vitt or black Truffle from Sarrion and Tuber Aestivum or Summer Truffle.

- Black winterTruffle (Tuber Melanosporum) or black Truffle from Sarrion, as its colour and harvesting time indicates, is black and is harvested in winter (from December until March). It is more or less round, pyramidal and black in appearance and the interior is black with whitish veins. It is the most valued and appreciated truffle in gastronomy. It has a fine and pungent aroma, once tasted its flavour is difficult to forget.

Tuber Melanosporum
- Summer truffle (Tuber Aestivum) is harvested between May and September, similar in appearance to the Melanosporum variety, but its pyramidal crust is much more pronounced and cream or vanilla coloured.
