What is a Truffle?

The truffle is an underground fungus that lives in symbiosis with the roots of certain deciduous trees, typically holm oak (Quercus Ilex), oak (Quercus fagaceas) and hazel (Quercus avellana). All varieties of truffle usually have a roundish and irregular shape.

Truffle´s varieties:

There are several kinds of truffles, but the Black Truffle (Tuber Melanosporum) is highly prized as in international haute cuisine, and considered as the "black diamond" of the gastronomy.

In Spain, the most reputed variety is the black truffle (Tuber Melanosporum Vitt). They has a strong and peppery smell, and exquisite flavor. Harvesting takes place from late November to mid-March. 
Tuber Aestivum black truffle or summer truffle grows from summer until early fall. It can be distinguished by its angular wrinkles. The color is a brownish black and the flesh has an intense, characteristic perfume and flavor.

Around 50% of the global production of Black Truffle  (Tuber Melanosporum) comes from Spain and the town of Sarrion (Teruel) has the greatest surface of planted oak trees in the entire world.

Where to find truffles? In Sarrion, Spanish Capital of Black Truffles (Tuber Melanosporum)

A fresh black truffle has an incomparable aroma that is much appreciated in "haute cuisine" gastronomy all over the world, where it is celebrated as the culinary “black diamond.” 
Black truffles are the hypogeous mushroom or fruiting body of the fungus, Tuber melanosporum Vitt.

Black truffles (Tuber Melanosporum) have traditionally been found in wild areas. But, lately, wild truffles have become scarce, so trees previously inoculated with the truffle mycelium are now being planted. Such plantations have been set up in most of the historical truffle areas, especially in Teruel (Aragón), in northeast Spain. The trees are carefully tended and pruned. Sarrion is the largest Spanish plantation area with more than 3.000 Ha cultivation.
This is a rugged, mountainous area with a harsh climate yet, surprisingly, just an hour's drive away from the mild Valencia coast.

The Best Black Truffle Mac & Cheese: recipe. Gastronomy.

With a Black Truffle (Tuber Melanosporum) slicer, you make any meal pure magic. Put sliced truffles in Macaronis & Cheese, and you have a great culinary experience.

  • Melt the butter and saute the sliced onion, then whisk in the flour, stirring for several minutes. Slowly pour in the milk, whisking constantly. Bring the sauce to a simmer while whisking regularly so it does not stick. Simmer for 30 minutes or until the sauce has thickened.
  • Cook the macaroni according to package directions until al dente and drain.
  • When the sauce is ready, remove it from the heat and stir in the cheese,  2 Tablespoon of  truffle oil, add sliced Black Truffle and season with salt and pepper.
  • Add the macaroni to the sauce and stir over medium-low heat for a couple minutes. Bake for about 15 minutes and then broil for two minutes until cheese are golden brown. Lightly drizzle with black truffle oil.

- 1 jar of Manjares de la Tierra truffle in its own juice.
- 15 oz (5 C) dry elbow macaroni
- 2 tablespoons of Truffle oil
- 1 oz purpose flour
- 1 Litre of milk
- Sliced onion
- 6 oz (2 C) shredded Cheddar
- 1/4 C (1/2 stick) butter
- Salt & pepper
